You need:
1 c chopped onions
2tbsp butter or margarine
1 4oz can green chili peppers rinsed, peeled and chopped
1 tsp. ground covander seed
2 1/2 c chicken broth
1 1/2 c shredded monterey jack or mozzarella cheese
1/2 c chopped green peppers
2 c chicken cooked and chopped
3 tbsp butter or marfarine
1/3 c all-purpse flour
3/4 tsp salt
1 c sour cream
12 6in tortillas
In large saucepan, cook onions and green peppers in the 2 tsp of butter until tender. Combine onion mixture in a bowl with chopped chicken and green chili peppers and set aside.
For sauce, in the same saucepan, melt 3 tbsp butter. Stir in flour, covander seed and salt. Stir in broth all at once. Cook and stir til thickened and bubbly, for 1-2 mins after.
Remove from heat. Stir in sour cream and 1/2 c cheese. Stir 1/2 c of the sauce into the chicken mixture. Dip each tortilla into remaining sauce to soften. Fill each tortilla with about 1/4 cup of the chicken mixture. Roll up and arrange rolls in a 13x9x2 baking dish. Pour remaining sauce over. Sprinkle with remaining cheese. Bake uncovered at 350 for about 25 mins or til bubbly.
You cannot go wrong with this dinner. Top it off with some letuce, tomatoes, salsa, sour cream......and you are in for a real treat!!!
